Ingredients:
- 25 lbs. carrots
- 6 lbs. raisins
- 10 cups "Nayonnaise" or make your own non-dairy mayonaise
- 20 lemons juice of
Equipment:
Grate carrots, then mix all ingredients in a large mixing bowl. Serve cold.
Note: Nayonnaise is a brand of non-dairy mayonnaise made by Nayosa. It is an excellent substitute for mayonnaise. However, you can alse make your own by blending ten pounds of tofu with lemon juice, vinegar, and two teaspoons of garlic poweder. You can add a touch of olive oil if you wish.
