Ingredients:
- 6 carrots, grated
- 1 cup raisins
- 1 cups "Nayonnaise" or make your own non-dairy mayonaise
- 1-2 lemons juice of
Equipment:
The process is the same as when making this salad for 100 servings. Grate carrots, then mix all ingredients in a large mixing bowl. Serve cold.
Note: Nayonnaise is a brand of non-dairy mayonnaise made by Nayosa. It is an excellent substitute for mayonnaise. However, you can alse make your own by blending 1 cup of tofu with lemon juice, vinegar, and two teaspoons of garlic poweder. You can add a touch of olive oil if you wish.
