Fruit Salad for 100

Ingredients:
  • 100 pieces assorted fruit (apples, oranges, pears, peaches, bananas, pineapples, berries, raisins and so on)
  • 20 lemons juice of
Equipment:
  • large mixing bowl
  • plastic storage buckets with lids
Cut the fruit into bite-sized pieces. In a large mixing bowl, mix fruit together with lemon juice, coating all pieces. The lemon juice helps slow the browning which occurs when fruit is exposed to the air. Store fruit in plastic "tofu" buckets with tight fitting lids and refrigerate, if possible. Serve in small portions using a small serving bowl. This salad also tastes great with granola, shredded coconut, or nondairy icecream.
