Orange Berry Muffins

Makes: 12 Muffins

Prep Time: 10 minutes

Cook Time: 35 minutes

Dry Ingredients:
  • 2 cups All Purpose Flour
  • ⅔ cups sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
Wet Ingredients:
  • 1 cup water or orange juice (if water, substitute 2 tbsp of water with vinegar)
  • ½ cup vegetable or canola oil
  • zest from 1 orange or 1 tsp vanilla extract

Mix the wet and dry ingredients seperately, then combine. Gently mix in 1-2 cups frozen berries of choice. Spoon into muffin tins, or a 9 inch greased cake pan.

Bake at 350 for 35 minutes (muffins) or an hour (cake pan), or until a butter knife can be cleanly inserted into the middle of the muffin/cake.
