- 2 cups All Purpose Flour
- ⅔ cups sugar
- 2 tsp baking powder
- ½ tsp baking soda
- 1 tsp salt
- 1 cup water or orange juice (if water, substitute 2 tbsp of water with vinegar)
- ½ cup vegetable or canola oil
- zest from 1 orange or 1 tsp vanilla extract
Mix the wet and dry ingredients seperately, then combine. Gently mix in 1-2 cups frozen berries of choice. Spoon into muffin tins, or a 9 inch greased cake pan.
Bake at 350 for 35 minutes (muffins) or an hour (cake pan), or until a butter knife can be cleanly inserted into the middle of the muffin/cake.
