Potato Soup for 6

Makes: 6 servings

Cook Time: 1 hour or more

Ingredients:
  • 5 tbsp olive oil (optional)
  • 2-3 cloves diced garlic
  • 1-2 onions chopped
  • 1 tbsp thyme
  • 1 tbsp basil
  • 1 tbsp oregano
  • 12 cup water
  • 2 lbs. potatoes, cubed
  • 1 tbsp sea salt (optional)
  • 1 tbsp white pepper
  • 1 lb. carrots, chopped
Equipment:
  • 4 L soup pot
Your potato soup for six is prepared following the same directions you would if you were making soup for 100 people. You don't want to add too much salt and pepper. I love to remove the salt and use additional dill to my own soup. You might also enjoy the flavor of dill.
